Japanese Chain Restaurants Vietnam (JCR Vietnam) is the operator of leading Japanese dining concepts including Genki Sushi, the renowned Kousoku sushi chain, and Yakiniku Like. We are dedicated to bringing authentic, high- quality, and innovative Japanese dining experiences to the Vietnamese market. We are seeking a passionate and skilled culinary leader to drive our kitchen operations and spearhead our menu innovation.
Job Summary
We are looking for an experienced Head Chef with a strong background in Japanese cuisine. You will be responsible for the overall smooth running of our kitchen operations, ensuring food quality consistency across all outlets, and leading Research & Development (R&D) for new menu items and seasonal campaigns for both Genki Sushi and Yakiniku Like.
Key Responsibilities
Kitchen Operations & Management:
• Operational Excellence: Oversee daily kitchen operations restaurant, ensuring compliance with company standards and SOPs.
• Staff Management: train, and mentor the kitchen team.
• Quality Control: Maintain high standards of food quality, presentation, and consistency for both Genki Sushi and Yakiniku Like product lines.
• Cost Control: Manage Food Cost (COGS) effectively. Monitor inventory, minimize wastage, and optimize kitchen workflows.
• Hygiene & Safety: Ensure strict adherence to food safety regulations (HACCP) and hygiene standards in all kitchens.
Research & Development (R&D):
• Menu Innovation: Lead the creation of new dishes, sauces, and seasonal menus for both brands.
Localization: Adapt authentic Japanese recipes to suit the local Vietnamese palate while maintaining brand identity.
• Testing & Implementation: Conduct food tastings with management, document recipes, create standard recipe cards, and train staff on new menu launches.
Japanese Cuisine Expertise:
• Yakiniku Expertise: Oversee meat selection, cutting techniques (butchery), and marinade formulations for the Yakiniku brand.
• Sushi Proficiency: Oversee the technical standards of sushi making (rice preparation, fish cutting techniques, handling raw seafood).

Requirements
• Language: Fluency in English is a plus; knowledge of Cantonese is advantageous.
• Cuisine Focus: Deep knowledge of Japanese Cuisine is mandatory. Experience with Sushi chains or Yakiniku concepts is a huge advantage.
• Experience: Minimum 3 years of experience as a Head Chef in a Japanese restaurant chain.
• Personality: Creative, detail- oriented, adaptable to a fast- paced environment, and hands- on.
