OBJECTIVE OF THE POSITION:
Responsible for cleaning all food and beverage back of the house areas, equipment, utensils according to our hotel’s standard and maintain the cleanliness of working area and assigned cleaning sections follows all Hygiene (HACCP), food Safety and work Safe standards with the guidance and supervision from the Chief Steward.
The Steward plays a vital role in maintaining the overall cleanliness, hygiene, and operational readiness of the kitchen and back- of- house areas. This position ensures that all food & beverage outlets, banquet functions, and kitchen teams are fully supported with clean equipment, utensils, and service ware. The Steward must follow strict sanitation standards, adhere to safety regulations, and support the smooth functioning of culinary operations.
MAIN RESPONSIBILITIES:
• Attend all staff meetings and training as required for the operation and receive all instructions of work duties by the Supervisor.
• Responsible for reporting any fire or health and safety hazards to immediate supervisor or any other appropriate department head.
− Silver, bronze, copper polishing.
• Be aware of the correct function of the Dishwashing machine.
− Cleaning of shelves and filters.
− Garbage disposal.
• To keep a good communication with the F&B service staff, in order to reach a good coordination between both departments.
− Correct type of cleaning equipment.
− Correct procedures according to standards.
• Carry out any alternative stewarding duties as may be assigned by Chief Steward or his assistant according to the needs of the department.
• Assist, where necessary, in preparing and checking equipment for kitchen or outlet mise en place.
− Cleaning of ice machines.
− Correct cleaning agents and quantity.
• Ensure that the following is implemented to facilitate effective cleaning.
− Kitchen overnight cleaning.
• Responsible for correct use of detergents and other chemicals when cleaning different equipment, utensils or the kitchen floor.
− Handling and cleaning of equipment trolley.
− Kitchen equipment cleaning.
• Change rubbish bags in all areas required.
• Responsible for the following as assigned (where applicable)
• Collect and deliver Garbage from all food and beverage sections.
− Proper handling of equipment (e.g. appropriate temperature control of machine).
− Floors / wall cleaning in the kitchen.
− Dishwashing process.
− Washing of dirty F&B operating equipment.

Qualifications & Requirements:
- Strong physical stamina; ability to lift up to 20 kg and work on feet for extended periods.
- Flexible to work shifts, weekends, and holidays as per operational needs.
- Prior experience in stewarding, housekeeping, or janitorial services (preferred but not required).
- Ability to operate dishwashing machines and cleaning equipment.
- Basic knowledge of food hygiene and sanitation practices.
